Frank Deshon's kebab recipe


 

 

Here's a delicious summer favourite of ours. Too good to keep a secret!

 

Marinade

  • 5 tablespoons of olive oil
  • 1 lemon, juiced
  • 2 garlic cloves, chopped

    1. Mix marinade ingredients together in a large bowl and set aside


    2. Kebabs

      • 2 zucchini
      • 1 eggplant
      • 2 capsicum
      • 1 red onion
      • punnet of mixed cherry tomatoes
      • meat of your choice (or keep it vegetarian)

        1. Chunky cut all ingredients and toss in marinade. Leave for a couple of hours.
        2. Thread onto skewers
        3. BBQ until browned to your liking
        4. Serve on cos lettuce with your favourite homemade aioli —or try this:

          Dressing

          • 1 cup of plain yoghurt
          • 1 clove of garlic, crushed
          • Lime juice, 1 tablespoon

            1. Mix together and serve with you kebabs and salad!
